This pan, made from carbon steel, is the ideal metal for cooking the perfect paella. This type of pan has been used in Spain for decades.
The red handles are produced from steel and painted with heat resistance paint, which is a Spanish trademark.
The large cooking surface allows the rice to cook evenly and to maximize flavor.
The carbon steel pan also helps in developing the socarrat, caramelized rice that sticks to the bottom of the pan.
Don't let the "spanish rice" you've had in the past fool you, paella, the national rice dish of spain is a different beast all together. Although paella refers to both the dish and the pan used to cook it, it really is the pan that makes the dish. The 15 inch polished steel paella pan from Myson is made of carbon steel for optimum heat distribution and retention, features double riveted handles and a traditional diveting on the base of the pan that reduces sticking. The pan is large in diameter and shallow so all of the ingredients cook in a uniformly. As the pan seasons over time, it will create a naturally non-stick surface.
